Baked Egg & Ham Tortillas




Ingredients

·        4 small Corn Tortillas (approx. 50 calories each)
·        4 ounces reduced-sodium deli Ham
·        1/4 fresh Red Bell Pepper, chopped
·        1/2 fresh JalapeƱo, seeded and chopped
·        2 tablespoons shredded Cheese
·        2 large Eggs

Directions

Preheat oven to 400 F.
Spray a baking sheet with cooking spray, lay two tortillas down, top with peppers, ham, and cheese, top with remaining tortillas, carefully crack egg over top.
Bake for 10-12 minutes.
Enjoy with salsa, sour cream, or avocado.
